Twice Baked Potatoes
easy to prepare and great as a snack or as part of a meal
serves 4
Preparation Time 10 minutes
Cooking Time 1 hour 20 Minutes

Ingredients
4 Baking Potatoes
1 Onion peeled and chopped
25gr Butter
1 red or green Pepper seeds removed and diced
200gr Lardons or chopped up Bacon
125gr Mushrooms chopped up
225gr Grated Cheddar Cheese
2 tbsp Creme Fraiche
1 tbsp wholegrain Mustard (optional)


Method
Preheat the oven to 220c
Wash the Potatoes, pat dry with kitchen towel and prick all over with a fork
Rub a little Olive Oil over the potato skins and bake for 1 hour
For the filling:- Melt the butter in a frying pan, fry the Onion, Pepper and Lardons for 3-4 minutes
Add the Mushrooms and fry for a further 3 minutes
Cut the baked potatoes in half and scoop out the flesh into a mixing bowl, taking care to keep the skins intact
Stir in the fried ingredients and half of the cheese together with the Mustard, Creme Fraiche and black Pepper
Spoon the mixture into the potato skins and sprinkle with the remaining Cheese
The potatoes can be prepared to this stage in advance
Place on a Baking tray and bake for a further 20 minutes
