Gin a Misu
Gin and Lemon Tiramisu
Gin and Lemon replace the Brandy and Coffee
Ideal for dinner parties as it can be prepared in advance
Serves 4
Preparation Time 15 minutes
Chill overnight or at least 4 hours

1 Egg
2 Lemons
50g Caster Sugar
4 tbsp Gin
250g marscapone cheese
packet sponge fingers
100 g double cream
jar Lemon curd
10 Amaretti biscuits

Mix together 2 tbsp Gin, 25g sugar and juice of 1 Lemon and stir until the sugar is disolved
Separate the egg and whisk the white until it forms peaks
In a separate bowl, whisk the cream until it forms soft peaks
Whisk together the Marscapone, egg yolk, zest of 1 Lemon, 50g lemon curd, 25 g sugar, juice of half a lemon and 1 tbsp Gin
Fold the cream and egg white into the Marscapone mix
Take a rectangular serving dish approx 15 x 20cm
Line the dish with sponge fingers dipped in the Gin/Lemon Juice mix
Drizzle a little more of the juice ove the Fingers
Cover with half of the Marscapone mix and smooth over
Take 2 Tsbsp Lemoncurd and 1 tbsp Gin and mix to a smooth paste
Drizzle half of this paste over the marscapone
Repeat these three layers
Leave to chill
Sprinkle with crumbed Amaretti biscuits to serve
