Traditional Corrèzien Recipe
Cherries baked in a Creamy Sweet Batter
Delicious served with Vanilla Icecream
Serves 4
Preparation Time 10 minutes
Final cooking Time 40 Minutes

2 Eggs
1Egg Yolk
125g brown Sugar
10g Cornflour
20g Plain Flour
pinch of salt
100g Crème Fraîche
150ml Milk or Cream
400g Cherries
butter and extra brown sugar to line baking dish
Icing Sugar to dust over the top

Pre-heat the oven to 180c
Beat the eggs and sugar together. Add the flour, cornflour and Salt. Mix well
Add the Crème Fraîche and Milk / Cream. Beat together well
Smear the bottom of a 20-22cm ovendish with butter sprinkle with brown sugar
Spread the cherries in the oven dish and pour over the batter
Bake for 40 minutes
Allow to cool then sprinkle with icing sugar to serve
