Christmas Pudding Icecream
However full you may be feeling, you'll want to make room for this creamy dessert
It is simply divine
Makes 1.5 litres Serves 6-8
Preparation Time 10 minutes plus 24 hours to Freeze

Ingredients
8 oz/225g Luxury dried mixed fruit
2 tablespoons Brandy
2oz / 50gr Caster Sugar
2 tablespoons liquid Glucose
1 teaspoon Mixed Spice
1 teaspoon Cinnamon
500ml tub ready made Custard
300ml / 10fl oz Double Cream


Method
1. Put the dried fruit in a bowl and soak with the Brandy
--can make your own fruit mix with dried sultanas, raisins, chopped mixed peel and glacé cherries
2. In a pan gently heat 75ml water with the sugar and glucose until the sugar dissolves.
3. Increase the heat and bring to the boil. Add the spices, remove from the heat and stir to blend. Allow to cool
4. Mix together the cream and the custard. Add the other ingredients and stir until combined
5. Put into a suitable container e.g. empty icecream tub and put in the freezer
6. After 6 hours take it out of the freezer and mix with a fork to ensure that the fruit is evenly distributed
7. return to the freezer for at another 6 hours
8. Remove from the freezer 15 minutes before serving
