Peach and Amaretti Fool
Combining the flavours of Peach & Amaretti in a creamy dessert
Ideal when peaches are in season. Otherwise use tinned Peaches
Serves 4
Preparation Time 20 minutes plus time to chill

--- If using fresh Peaches
4 Fresh ripe Peaches
2 Tablespoons of Honey
The seeds of a vanilla pod
--- Or a tin of peaches
500gr tub of Fromage Frais
1 Tablespoon of sieved Iving Sugar
Packet of Amaretti Biscuits

--- If using fresh Peaches
1. Pre-heat oven to 170c mark 3 150c(fan)
2. Stone, peel and roughly chop the peaches and spread in a roesting dish
3. Mix the honey and Vanilla seeds and drizzle over the peaches. Cook for 10 mins
--- Or Drain and chop the tinned peaches
4. Whip the Fromage Frais and Icing Sugar together in a Mixing bowl
5. Crumble (or use a food processor) a handful of the Amaretti to granulated sugar size
6. Stir the Amaretti crumbs and Peaches into the whipped Fromage Frais
7. Divide the mixture into 4 dessert dishes and put in the fridge to set for at least 30 mins
8. Just before serving,sprinkle with more crumbed Amaretti
