Chocolate Mousse
Delicious light chocolate mousse with a nice warming hint of alcohol
Can be served in individual dessert bowls or a single large bowl
Serves 8
Preparation Time 20 minutes plus time to chill


Ingredients
8 oz/225g cooking chocolate
5 eggs (separated)
½ pt /300ml double or whipping cream
2 tablespoons rum or brandy
1 teaspoon instant coffee
1 teaspoon vanilla essence


Method
1. Melt the chocolate over a Bain Marie
2. Remove from the heat and allow to cool slightly
3. Beat the egg yolks lightly and then beat into the melted chocolate
4. Add the coffee dissolved in 1 tablespoon of hot water
5. Add vanilla essence and mix well
6. Beat the cream until thick
7. Stir in the rum / brandy and fold into the chocolate mix
8. Beat the egg whites and fold into the mixture a bit at a time
9. Pour into serving dish or individual dishes
10. Chill for at least 2 hours
11. For a special touch when serving, decorate with physalis with the sepals folded back to reveal the fruit
