Raspberry Mousse
Simple no cooking recipe
Great when Raspberries are in season
Serves 6
Preparation Time 10 minutes
Needs an hour or more to set

Ingredients
Packet of Raspberry Jelly to Make 1 pint
410gr can of Evaporated Milk
500gr fresh Raspberries


Method
1. Melt the jelly in boiling water to make 1/2 pint and set aside to cool
2. Wash the rasperries and drain on kitchen towel. Reserve enough to decorate the top
3. Line 6 dessert dishes with 2/3 of the raspberries and gently press them down
4. In a deep mixing bowl whisk up the Evaporated Milk
5. Add the jelly and remaining raspberries and continue whisking until the mixture is light and full of air bubbles
6. pour the mixture into the dessert dishes and put in the fridge to cool
7. Decorate with the reserved Raspberries before serving
