Lamb with Sundried tomato and basil sauce
Quick and easy dish.
Serve with baby new potatoes and seasonal vegetables
Can use loin chops or leg of lamb steaks
Serves 4 - adjust quantities for sauce for different servings
Preparation 20 minutes
Cooking 20 minutes

Leg of lamb steaks or Loin chops
Olive oil for frying
Garlic cloves (crushed)
for the sauce:
125g sundried tomatoes
2 cloves crushed garlic
15g fresh basil leaves
30g fresh parsley
300ml stock
Salt and pepper to season

1. Heat oil in a pan, add garlic and lamb and cook for 6-8 minutes each side
2. Place all of the sauce ingredients in a blender and blend until smooth
3. When the lamb is cooked, keep warm on serving dish
4. Heat the sauce through in the pan and serve with the lamb
