Chicken breast stuffed with sundried tomatoes & Goat's Cheese
A succulent way to serve chicken breasts With a tangy stuffing.
Serve with potatoes SautÚd with onions and Chorizo or Lardons
Serves 4
Preparation 5 minutes
Cooking 40 minutes

4 large boneless Chicken breasts
150g mild crumbly goat's cheese
8 Sun dried Tomatoes
Dried Taragon or Oregano
Salt and pepper

1. Pre-heat the oven 180C
2. Make a long horizontal slit through the thickest part of each Chicken breast
3. Line the cavities in the chicken with a couple of sun dried tomatoes and crumbled goat's cheese. Close the chicken tightly together
4. Place the chicken in a greased oven dish
5. Spoon over a teaspoon of the sun dried tomato oil and sprinkle with the dried herbs.
6. Cover with foil and place in the oven for 40 minutes. Remove the foil cover after 20 Minutes
7. Spoon over any juice left in the dish before serving
