Salmon baked with Dill and Lime crust
Can use individual salmon fillets or for a dinner party a whole side of salmon looks very impressive.
Serve with new potatoes or rosti
Can be prepared in advance and popped in the oven 20 minutes before eating
Serves 4
Preparation 10 minutes
Cooking 20 minutes

4 x 6oz / 170g salmon fillets, skinned and boned
oil for brushing
for the crust
1 tablespoon demerara sugar
finely grated zest and juice of a lime
2 heaped teaspoons of dill mustard
4 heaped tablespoons of breadcrumbs

1. Preheat the oven to 190c / gas mark5
2. mix the breadcrumbs, sugar and lime zest
3. add the mustard and lime juice and mix to a paste
4. place the salmon on baking parchment on a baking tray
5. spread the crust mixture over the top of the salmon
6. Bake for 15-20 minutes
