Baked Cod with Cheddar crust
A nice creamy, cheesy sauce
Serves 2
Preparation 10 minutes
Cooking 30 minutes
Ingredients
500g Cod or other white fish (unsmoked)
125 g grated cheddar
1 large egg
2-3 tablespoons milk
¼ teaspoon powdered english mustard
2 tablespoon chopped fresh parsley
salt and freshly milled black pepper
Lemon wedges to garnish

Method
1. Pre-heat oven 220C (200C fan)
2. Grease an ovenproof dish and line with the fish
3. Add milk and sprinkle with ½ the parsley and seasoning
4. Beat the egg and mix with the cheese and mustard. Pour over the fish
5. Bake in the centre of the oven for 30 minutes
6. Sprinkle with the remaining parsley and serve with lemon wedges and a nice white wine
