Tangy Chicken and Potato bake
Tasty one pot supper dish
The basic idea can be adapted e.g. use sweet potatos
Serves 4
Preparation Time less than 10 minutes
Cooking Time 80 Minutes

Ingredients
MARINADE
5 tablespoons Olive Oil
Salt
Black pepper
Paprika
2 crushed cloves of Garlic
splash of Tobasco sauce
BASE
8-10 medium size potatoes
FILLING
4 Chicken breast fillets
Chorizo (Strength and quantity to taste)
TOPPING
Medium sized onion or handful of spring onions
200gr smoked lardons
150gr grated Cheddar cheese



Method
1. Mix the marinade ingredients in a mixing bowl
2. Peel the potatoes and cut into 1cm cubes
3. Toss the potatoes in the marinade and then transfer to an oven proof dish
4. Leave the residue of the marinade in the bowl
5. Cook the potatoes in a pre-heated oven (200C)for 50 mins, turning occasionally
6. Meanwuile dice the chicken into 2cm cubes and the Chorizo into .5cm Cubes
7. Toss the meat in the marinade
8. Fry the Lardons, Finely chop the Onions and combine with the grated Cheese
9. When the potatoes are crisp, Spread the meat over the top and then cover with the topping
10. Return to the oven (180C) and bake for 35 minutes
11. Serve with seasonal vegetables
