Pork Escalopes with Cheese and Crumb Coating
Great tasty alternative to a Schnitzel
Very quick and easy to make
Adjust to suit number of sevings
Preparation Time 5 minutes
Cooking Time 35 Minutes

1 pork escalope per person
olive oil to coat escallop
Fresh breadcrumbs 2 tablespoons per escalope
Finely grated parmesan cheese 1 dessertspoon per escalope

1. Gently beat pork between sheets of clingfilm using meat hammer or rolling pin
2. Mix together the breadcrumbs and cheese
3. Lightly coat the pork with olive oil
4. Cover both sides of the pork with the crumb mixture
5. Place on a parchment covered baking tray or grill pan
6. Bake in a pre-heated oven (180C) for 35 mins or until golden
