Greek Style Mushrooms with Haloumi
Tasty vegetarian dish
Serves 4
Preparation Time 5 minutes plus 30 minutes in fridge
Cooking time 10 Minuters

250gr Haloumi Cheese
500 gr button mushrooms (or well drained tinned mushrooms)
4 tablespoons Olive Oil
Juice of a large Lemon
3 Garlic cloves
1 teaspoon of dried Oregano
Small red Chilli finely chopped or teaspoon of piment paste
8 sundried tomatoes cut into thin strips
Rocket leaves
French Bread to serve


1. Combine the Olive Oil, Lemon Juice, Garlic, Oregano and Chilli in a bowl
2. Add Salt and freshly ground Black pepper and mix thoroughly
3. Drain and slice the Haloumi into 12 slices
4. Brush both sides of the Haloumi with the marinade. Cover and put in the fridge
5. Toss the Mushrooms in the bowl of marinade. Cover and put in the fridge
6. Leave for 30 minutes before cooking
7. Fry the Mushrooms in a wok until golden on the outside
8. At the same time fry the Haloumi in a lightly oiled pan until golden brown
9. Toss the Rocket and Tomato slices together and share between 4 plates
10. A few Capers can be added for extra flavour
11. Share the mushroms over the salad and place the Haloumi on top
12. Serve with French Bread
