St Maure Goat Cheese, Pear, Apple and Raspberry Salad
Great flavours of Fruit and mild Goat's Cheese
Serves 4
Preparation Time 30 minutes

2 Firm ripe Pears
2 Granny Smith Apples
Raspberry Coulis
Walnut Oil
250gr Raspberries
a few Walnuts
A few Lettuce Leaves


1. Peel and core the Pears. If they are hard poach for a few minutes in Red Wine
2. Peel and core the Apples
3. Slice the Cheese into 16 rings
4. Slice each of the Apples and Pears into 10 rings
5. Put a few shredded Lettuce leaves on the plates
6. Arrange alernate Apple, Pear and Cheese slices on the Lettuce
7. Garnish with the Raspberries and Walnut pieces
8. Make a dressing with equal amounts of Walnut Oil and Raspberry Coulis
9. Drizzle Dressing over the Salad
10. Serve immediately to prevent the fruit from going brown
