Hassleback Chicken breast gratin
A simple novel way of doing Chicken Fillets
Very easy to prepare and delicious
Adjust quantities to suit numbers

Ingredients
1 Chicken fillet per person
Red bell Pepper
Courgette
Tomato
grated Cheddar Cheese
A drizzle of dry white Wine
1 tsp Cornflour

Method
Preheat the oven 180°c
Slice into the chicken every cm along its length, without cutting right through
Fill the cuts with slices of Courgette, tomato and pepper
place the fillets in an oven proof dish with a drizzle of wine
Salt and Pepper then bake for 15 minutes
Sprinkle the fillets with grated cheese and bake for a further 15 miutes
Remove the fillets onto a flat plate, cover with more grated cheese
Grill the fillets for a couple of minutes until the cheese melts and bubbles
Meanwhile put the juices and any cheese from the dish into a pan
Bring it to a simmer and add the cornflour disolved in a little more wine
Transfer the chicken to the plate for serving and pour the sauce over it
