Goat’s Cheese and roasted Red Pepper tower
A nice blend of flavours with mild Chèvre, Pepper and Basil
Quantities are for 3 servings
Roast you own Peppers or, for simplicity, use a jar already prepared

Ingredients
200gr Chèvre Frais
220gr jar Poivrons Piquillo
3 slices of wholemeal bread
Green Pesto
Cucumber, Cherry Tomatoes and Fresh Basil to garnish
Uses Presentation rings to assemble


Method
Cut squares of greaseproof paper a little larger than the presentation rings
Using the presentation rings, cut a circle from each slice of bread
Spread a little Green Pesto on each bread circle
Place each ring on a paper square on a single flat plate
Put the bread in each ring (pesto side up)
Spread a layer of the cheese on top of the bread
Cover the cheese with a layer of the pepper slices
Repeat these 2 layers
As a guide, each layer uses about 1/6th of the ingredient
Chill in the fridge for an hour before serving
Transfer each ring to an individual plate for serving
Slide out the paper and then remove the ring
Garnish and serve
